And for those of you who love also love cooking wild game, here are a couple of recipes from GameFeed this year:
Elk Souvlaki with Peppers and Tzatziki
1½ pounds trimmed elk meat, cut into bite-sized cubes
1 red bell pepper, cut into 1-inch cubes
2 tablespoons olive oil
6 cloves garlic, pasted
1 teaspoon dried oregano
Zest of one lemon
Pepper to taste
Juice of one lemon
Tzatziki (recipe follows)
Method: Combine the elk, peppers, olive oil, garlic, oregano, lemon zest and pepper to taste in a bowl. M ix well and let sit for thirty minutes at room temperature or longer in the fridge. Heat a grill, grill pan or saute pan to hot. Skewer the meat and peppers alternating as you go. Season with salt to taste. Grill or saute the skewers about a minute to 1/2 minutes on each side. Spritz with the lemon juice after cooking. Serve with the tzatziki sauce.
Cucumber and Mint Tzatziki
1 cup plain Greek yogurt
1 cup finely diced cucumber
1 tablespoon honey
1 teaspoon lemon juice
¼ cup chiffonade of mint
Salt and pepper to taste
Method: Combine everything in a bowl. Serve or chill and serve.
