Chef Joel is offering a fun and delicious way to show support for our neighbors in Greenland, while learning how to prepare delicious, international recipes:
“Culinary Celebration of Greenland and Denmark” – Adult Cooking Class, 3/6 (Fri) 6-8:30pm
Show your support for the independence and sovereignty of Greenland and Denmark, while learning how to prepare and they enjoy some of their delicious, traditional dishes. On the menu: Klarsuppe (“clear” soup with vegetable stock, leeks, carrots, small whitefish meatballs and buttery dumplings); Rejesalat (Greenlandic shrimp salad with fresh herbs); Fødselsdagsboller (Danish milk buns); Stegt Flæsk med Persillesovs (crispy fried pork belly with Parsley Sauce – the “national dish of Denmark.” Vegetarian substitute of Portobello Mushroom); Kartoffelsalet Varm (Greenlandic warm potato salad); Quick Pickled Roasted Beets; and Greenlandic Berry Tart for dessert. As I discussed in a previous blog (Homemade Soup Day), some aspects of traditional Greenlandic cuisine seemed “challenging,” and I suspected that many Madisonians would not find some dishes very appealing. Several traditional Greenlandic and Danish dishes include things like whale and seal blubber (which I passed on), and reindeer and muskox meat (which are hard to source here in WI, in addition to not being to everyone’s taste).
I did find a delicious-sounding soup, which I included in the class menu, however. We will be making a Danish soup called Klarsuppe which is a “clear” soup with vegetable stock, leeks, carrots, small whitefish meatballs and buttery dumplings. It is delicious, and I encourage you to come and learn how to make it with me!
