As I discussed in a previous blog (Homemade Soup Day), some aspects of traditional Greenlandic cuisine seemed “challenging,” and I suspected that many Madisonians would not find some dishes very appealing.  Several traditional Greenlandic and Danish dishes include things like whale and seal blubber (which I passed on), and reindeer and muskox meat (which are hard to source here in WI, in addition to not being to everyone’s taste).

I did find a delicious-sounding soup, which I included in the class menu, however.  We will be making a Danish soup called Klarsuppe which is a “clear” soup with vegetable stock, leeks, carrots, small whitefish meatballs and buttery dumplings.  It is delicious, and I encourage you to come and learn how to make it with me!

Hope to see you in the kitchen soon!
