UPCOMING TEEN COOKING CLASSES IN MADISON WITH CHEF JOEL

CLASSES FOR TEENS:

Chef Joel offers some classes specifically for Teens or Tweens/Teens.  These cooking classes are appropriate for youth ages 13-17 years old (Teen classes) and youth ages 11-17 (Tween/Teen classes).  If you have any questions about whether classes are appropriate for you/your child, please contact Chef Joel at hemmachef@gmail.com.

Teens are also very welcome in any of Chef Joel’s “Kids” classes.  Chef Joel keeps class sizes small and has students work together in small groups.  He generally groups kids by age and ability level and makes sure that everyone is challenged and kept busy in class.  All of our classes are hands-on and involve lots of cooking.  Kids/Tweens/Teens do the cooking!

Chef Joel enjoys working with teens and young adults and would be happy to offer more classes for older youth.  If you would like to arrange a class or private event for a group of teens, please contact Chef Joel: hemmachef@gmail.com.

Chef Joel encourages teens to develop their love of food and fellowship by taking cooking classes.  Youth of all levels of ability, interest, and experience from 8-16 years old are welcome in Chef Joel’s “Kids” cooking classes.  If you have any questions about whether classes are appropriate for your son or daughter, please contact Chef Joel.

Chef Joel has considerable experience working with individuals with special needs, including physical and developmental disabilities.  He feels strongly that all individuals can successfully participate in culinary classes and works hard with all students to ensure that they fully participate in each class.  If your teen has special needs, please let us know ahead of time so that Chef Joel can make sure to accommodate them.

SPECIAL CULINARY EVENTS FOR TEENS –

LOCATION –

Teen cooking classes are generally held at St. Mark’s Lutheran Church, 605 Spruce St., Madison, 53715.

Class are held in the kitchen, which is in the basement.  Please enter the building from the north side entrance (from Spruce Street), by the playground.  There will be a sign on the door for the cooking classes.

PARKING –

There should plenty of street parking available.  There is also a small parking lot behind the building, accessible from Hickory Street.

DRESS CODE –

Participants must wear close-toed shoes.
Long Hair should be pulled back or put in a ponytail.
Hemmachef will provide aprons and towels to use during the class.

EQUIPMENT –

All equipment, foods, and materials necessary to complete the recipes are provided by Chef Joel.

CONSIDERATIONS –

Please inform Chef Joel of any of the following:

  •         Food allergies or restrictions, such as celiac disease, lactose-intolerance, etc.
  •         Special Physical Needs
  •         Special Educational Needs

CLASS PHILOSOPHY –

Participants are expected to behave with civility and respect for the Chef, the other participants, the equipment, and the food.

PARENTS IN CLASS –

Parents and/or guardians are not encouraged to stay during teen cooking classes.  Please contact Chef Joel if you are a parent who feels your teen has special needs.

PHOTOGRAPHS –

Chef Joel or other Hemmachef representatives may take photographs during class for use in marketing and promotional materials, with parental consent.  No names or other personal information will be included in these photographs.

CLASS CANCELLATION POLICY –

Please inform Chef Joel as soon as possible if you will not be able to attend.  Your full class payment will be refunded up to 5 business days prior to the date of the class.  If you cancel after this time you will not receive a refund. You may have someone attend in your/your child’s place, however.

If Chef Joel must cancel for any reason, every effort will be made to reschedule the class, and if you cannot attend at the new time, you will receive a full refund.

11/7 (Thu) – 5:30-7:30pm – Teen Pasta Party

Teens love pasta and learning to make their own homemade fresh pasta could inspire them to cook for the whole family – or at least make dinner for themselves.  In this hands-on cooking class, participants will learn the techniques of making Fresh Egg Pasta and rolling it out using a pasta machine.  Fresh pasta sheets will then be used to make their choice of several different hand-shaped pastas: Farfalle (bowtie-shaped), Orecchiette (ear-shaped), Garganelli (tube-shaped) and Maltagliati (“poorly cut”) pastas.  Alfredo Sauce and Marinara Sauce will also be prepared in class to taste with the pasta.  Location: St. Mark’s.  Class Cost: $50.

11/8 (Fri) – 5:30-7:30pm – Teen/Tween Vegetarian Feast

“Vegetarian Pancakes” – Participants will learn to make and then enjoy these delicious and fun international dishes that are all flat as pancakes!  On the menu:  Crispy Noodle Cakes with Ratatouille; Brown Rice and Scallion Pancakes with Creamy Tomato Sauce; and Lentil and Spinach Cakes with Yogurt and Cucumber Sauce.  Location: St. Mark’s.  Class Cost: $50.

12/6 (Fri) – 4:00-6:00pm – Teen Chocolates

Who doesn’t love chocolate?  Teens will learn about cooking with chocolate to make not only sweet chocolate desserts and treats, but also a savory dish!  Teens will prepare all of the following to enjoy in class and will also get to take some of the scrumptious chocolate treats home to share (or not!).  On the menu: Mole Negro Turkey Tacos; Chocolate Shortbread; Flourless Chocolate Cookies; and White Chocolate Orange Pudding.  Location: St. Mark’s.  Class Cost: $50.

12/20 (Fri) – 5:00-8:00pm – Teen/Tween Holiday Breads

Does your teen/tween love to bake?  This class will focus on bread-making/baking, of both yeast breads and quick breads.  Participants will learn and practice bread-making techniques to become confident bakers so they can make these delicious recipes again at home.  And they will also get to take some of each with to share.  On the menu: Braided Garlic and Herb Bread; Ciabatta (Italian Slipper Bread); Caramelized Onion and Potato Rolls; Lemon-Poppyseed Bread; Banana and Chocolate Chip Loaf; and Cinnamon Raisin Bread.  Location: St. Mark’s.  Class Cost: $55.

Learn to make some fabulous new recipes that will become favorites of all who get to taste them.  You will get to take some home to share, too.  On the menu: Yogurt and Cranberry Breakfast Muffins; Buttery Cinnamon Buns with White Glaze Icing; Heavenly Hawaiian Dinner Rolls; Caramel Apple Empanadas   Location: St. Mark’s.  Class Cost: $55.

10/7 (Mon) – 4:00-6:00pm – Kids Burgers and Beignets      

What could be better than burgers and beignets?!  In this class kids will learn to make two delicious, fun alternatives to standard burgers.  Then they will learn how to make Beignets (French-style doughnuts from New Orleans), as well as a tasty savory twist on the classic recipe.  On the menu:  Macaroni and Cheese Stuffed Burgers; Tomato, Mozzarella and Basil Stuffed Burgers; and all the classic burger fixings; plus Parmesan Cheese Beignets & Classic Cinnamon-Sugar Beignets.  Class Cost: $50.

11/11 (Mon) – 4:00-6:00pm – Kids Ravioli

Kids love pasta, and ravioli is fun to make and delicious to eat.  Learning to make their own fresh homemade pasta and ravioli could even inspire them to cook for the whole family.  Kids will learn the techniques of making Fresh Egg Pasta, Spinach Pasta and Tomato Pasta doughs. They will then roll them out using a pasta machine, and the fresh pasta sheets will be used to make Three Cheese ravioli as well as Italian Sausage and Pepper Ravioli.  Fresh homemade Alfredo Sauce and Marinara Sauce will also be prepared in class to taste with the pasta.  Location: St. Mark’s.  Class Cost: $50.

11/16 (Sat) – 12:30-3:00pm – Kids Pies and Tarts

Kids will learn to make three delicious tarts (two sweet and one savory) and have a chance to work with different doughs: Pâte Brisée, Pâte Sablée, and Chef Joel’s favorite Tart Dough.  They will get to sample their tarts in class plus take home some of each.  On the menu: Caramelized Apple Tart (Pâte Sablée); Brown Sugar and Cranberry Tart (Pâte Brisée); German Potato and Cheese Tart (Tart Dough).  Location: St. Mark’s.  Class Cost: $55.

11/25 (Mon) – 4:00-6:00pm – Kids Knife Skills

Empower your child to help with the cooking by learning real knife skills/techniques that will stay with them for as long as they cook!  Children are great at chopping, dicing and mincing when they learn the proper techniques and safety guidelines.  Kids will practice cutting a variety of fruits, vegetables, and bread.  They will learn special techniques for cutting onions, carrots, peppers and other vegetables, as well as learning how to paste garlic, mince parsley, and make chiffonade of lettuce.  Sign them up now for this intense hands-on life skills lesson with Chef Joel!  A light meal will be served during class but Chef Joel recommends participants have a snack before class.  St. Mark’s.  Class Cost: $40.

11/29 (Fri) – 2:30-5:30pm – Kids Bake

Fabulous class for kids who love to bake!  This class will add to participants’ baking repertoire with delicious new recipes and techniques for sweet and savory dishes.  Participants will make and bake the following recipes (and they will get to take some home to enjoy with friends and family).  On the menu: Chicken and Cheddar Strudel; Sausage and Gravy-Stuffed Biscuits; Sablé Bretons (French butter cookies); Coconut and Chocolate Chip Macaroons; and Caramel Baked Apples.  Location: St. Mark’s.  Class Cost: $55.

Kids can spend a fun Saturday afternoon learning to make delicious holiday treats.  Participants will learn how to prepare the following recipes and will have plenty to take home to share (or not!).  On the menu: Red Velvet Butter Cookies; Shortbread Biscuits; Chocolate Mint Jingle Balls; Cheddary Wafer Crisps; and Gingerbread Fudge.  Location: St. Mark’s.  Class Cost: $55.

12/30 (Mon) – 10:30am-1:00pm – Let’s Brunch for Kids

In this fun Winter Break class, kids will learn not only how to put on a great brunch for family and friends but also how to fend for themselves in the morning!  Come and learn the basics of egg preparation and many techniques for preparing delicious meals for fabulous brunches or to enjoy at any time of day.  On the menu: Classic Cheese Omelets; Soft Scrambled Eggs with Fresh Herbs; Norwegian Toast (toasted herbed croutons in scrambled eggs); Ham and Chip “Tortilla” (Spanish version of a Frittata); Baked Huevos Rancheros; and Very Berry Swirl Sweet Rolls.  Location: St. Mark’s.  Class Cost: $55.

1/2/2020 (Thu) – 10:30am-1:30pm – Kids French Baking

In this intensive Winter Break class kids will explore classic French baking techniques including working with puff pastry, pâte à choux, pâte brisee, and French bread dough.  They will also learn some other classic French culinary skills, such as learning how to properly caramelize onions.  Some of each batch will be sent home with each participant to show off their newly found or honed skills!  On the menu:  Fromage et Oignon Vol-au-Vents (puff pastry cups with cheese and caramelized onions); Apple and Cranberry Galette (rustic sliced apple and cranberry tart); Croquembouche (pâte à choux pastry puffs stacked and bound with caramel); Spinach and Swiss Palmier (palm tree shaped puff pastry filled with wilted spinach and Swiss); Ficelles (thin French bread loaves).  Location: St. Mark’s.  Class Cost: $60.

1/2 & 1/3/2020 (Thu & Fri) –2:30-4:30pm — Cooking, Manners & Etiquette Mini-Course: 2 Sessions

This fun and practical Winter Break class gives participants the opportunity to learn and practice the rules and rituals of basic manners and social etiquette in a fun and informal setting, whether they are going to off to school or simply spending more time dining in social settings.  Chef Joel has been teaching this highly popular, effective and ever-evolving etiquette class for over twenty years.  In the first class, participants will prepare their dinner, then sit and enjoy the rewards of their labor while discussing the concepts and rules of manners and etiquette.  In Class Two they will help to prepare a four-course meal and serve it in a formal dining setting.  As they eat, participants’ dining etiquette will be critiqued by Chef Joel in a fun and productive manner.  Recipes and handouts will be presented at the end of the course.

Class one — On the menu:  Mozzarella Flatbread; Herbed Turkey Patties with Marinara Sauce and Noodles; and Scandinavian Sugar Cookies.  Topics:  Common Courtesy; Manners and Etiquette 101; Guest and Host.

Class Two – On the menu:  Bread and Butter Basket; Winter Vegetable Soup; Tossed Salad with Balsamic Vinaigrette; Chicken Wellingtons with Rice, Gravy and Vegetable; and Caramelized Apples with Cinnamon Crème Chantilly.  Topics:  Manners and Etiquette 102; Dining Out.

Location: St. Mark’s.  Course Cost: $90/two sessions
