10/7 (Sat) – 3-5:30pm – Youth Fall Brunch   (V)

In this fun hands-on class, youth will learn not only how to put on a great brunch for family and friends but also how to fend for themselves in the morning!  Come and learn the basics of egg preparation and many techniques for preparing delicious meals for fabulous brunches or to enjoy at any time of day.  Participants will learn the technique of making perfect French-style omelets as they prepare their own perfectly cooked 2-egg cheese omelet.  On the menu:  Farmers’ Market Frittata (made with seasonal vegetables, eggs and a touch of Wisconsin cheese); Home-made Brown Sugar and Butter Pop Tarts; Classic Cheese Omelets; and Apple Cinnamon Streusel Scones.  Location: St. Mark’s.  Class Cost: $60.

10/9 (Mon) – 4-6pm – Youth Knife Skills   (V)

Empower your child to help with the cooking by learning real knife skills/techniques that will stay with them for as long as they cook!  Children are great at chopping, dicing and mincing when they learn the proper techniques and safety guidelines.  Kids will practice cutting a variety of fruits, vegetables, and bread.  They will learn special techniques for cutting onions, carrots, peppers and other vegetables, as well as learning how to paste garlic, mince parsley, and make chiffonade of lettuce.  Sign them up now for this intense hands-on life skills lesson with Chef Joel!  A light meal will be served during class but Chef Joel recommends participants have a snack before class.  Class Cost: $50.

10/28 (Sat) – 3-5pm – Youth Fall Ravioli   (V)

Kids love pasta, and ravioli is fun to make and delicious to eat.  Learning to make their own fresh homemade pasta and ravioli could even inspire them to cook for the whole family.  Kids will learn the technique of making Fresh Egg Pasta doughs. They will then roll it out using a pasta machine, and the fresh pasta sheets will be used to make these delicious homemade raviolis: Three Cheese ravioli, Pumpkin Ravioli and Spinach and Feta Ravioli.  Fresh homemade Alfredo Sauce and Marinara Sauce will also be prepared in class to taste with the pasta.  Location: St. Mark’s.  Class Cost: $60.

10/29 (Sun) – 3-5pm – Youth Halloween Treats    (V)

Learn to make delightfully disgusting-sounding but delicious-to-eat Halloween goodies in this fun, hands-on class!  Participants will get to taste their treats in class and will also get to take some of each home to share – maybe even with special Trick-or-Treaters.  On the menu:  Finger Bones & Blood; Graveyard Dirt Pudding; Exploding Entrails (filled pastry with sweet cream cheese and berries); and Melted Monster Bark.  Location: St. Mark’s.  Class Cost: $60.

11/4 (Sat) – 3-5pm – Youth Fall Baking   (V)

This is a great, hands-on class for kids/tweens/teens who love to bake!   This class will add to participants’ baking repertoires with some delicious new autumn-inspired recipes and techniques for sweet as well as savory dishes.   Participants will make and bake the following recipes (and they will get to take some home to enjoy with friends and family).  On the menu:  Cranberry Oat Bars; Pumpkin Cheesecake Muffins; Sweet Potato Biscuits with Honey Butter; and Butterscotch Toffee Crisps.  Location: St. Mark’s.  Class Cost: $60.

11/12 (Sun) – 12-2pm – Youth Fall Tarts    (V)

Participants will learn to make delicious sweet and savory tarts and have a chance to work with different doughs, including Chef Joel’s favorite Tart Dough.  They will get to sample the fruits of their labor in class plus take home some of each to share.  On the menu:  Salted Caramel Apple Tartlets; Tomato and Mozzarella Tarts; Herbed Yukon Gold Potato and Asiago Galette; and Pear Tatin.  On the menu: Location: St. Mark’s.  Class Cost: $60.

11/20 (Mon) – 3:45-5:45pm – Youth Pizza    (VO)

Participants will start by making a delicious homemade whole wheat pizza dough as well as a gluten-free pizza dough.  Then they will set fresh tomato sauce to simmering and prep toppings/fillings to make and bake personal pizzas from scratch.  Classic pizza ingredients will be prepared–including a variety of sautéed vegetables and cheeses—and fun alternative ingredients will also be explored.  On the menu: Pickle Pizzas; Mac n’ Cheese Pizzas; and Personal Pizzas.  Plus, a fun Strawberry & Chocolate dessert pizza will also be made.  Location: St. Mark’s.  Class Cost: $60.

11/25 (Sat) – 3-5pm – Youth Vegetarian Thai    (V)

Learn to cook some delicious vegetarian Thai favorites to enjoy now and impress your family and friends with later.  Participants do all the cooking in this hands-on class – learning and practicing culinary skills while making the following:  On the menu: Thai Green Curry Vegetable Lettuce Wraps;  Thai-style Corn Fritters with Soy Lime Dipping Sauce; Vegetarian Pad Thai with Eggplant and Rice Noodles; and yummy crispy Chai-Spiced Sugar Cookies for dessert.  Location: St. Mark’s.  Class Cost: $60.

11/27 (Mon) – 4-6pm – Youth Sushi    (VO)

Sushi is a blast for kids to make, and it’s not just raw fish; it’s a way of preparing healthy food.  (In this class, no raw fish will be used.)  Kids will learn to prepare dashi (seaweed stock) for Miso Soup, along with learning sushi techniques and ingredients.  They will then learn how to make Shari rice and how to prepare several kinds of Sushi Maki.  On the menu: Classic Miso Soup; California Rolls; Wisconsin Rolls; Spicy Tuna Rolls; and more.  Kids will also prepare Sesame cookies for dessert.  Location: St. Mark’s.  Class Cost: $60.

GENERAL

Chef Joel offers classes specifically for Teens or Tweens/Teens.  These cooking classes are appropriate for youth ages 13-17 years old (Teen classes) and youth ages 11-16 (Tween/Teen classes).  If you have any questions about whether classes are appropriate for you/your child, please contact Chef Joel at hemmachef@gmail.com.

Teens are also very welcome in any of Chef Joel’s “Kids” classes.  Chef Joel keeps class sizes small and has students work together in small groups.  He generally groups kids by age and ability level and makes sure that everyone is challenged and kept busy in class.  All of our classes are hands-on and involve lots of cooking.  Kids/Tweens/Teens do the cooking!

Fun hands-on class for parents (grandparents, etc.) and kids who love to bake together.  This class will add to your baking repertoire with delicious new recipes and techniques for sweet and savory dishes.  Adult-child pairs will make and bake the following (and will get to take some home to enjoy with friends and family):  Cranberry Oat Bars; Pumpkin Cheesecake Muffins; Sweet Potato Biscuits with Honey Butter; Butterscotch Toffee Crisps.  Location:  Stoughton Area Youth Center (567 E Main St Stoughton, WI 53589).  Class Cost:  $100 per parent-child pair (an additional child or adult may be added for $45 – Max 2 children per adult).

Chef Joel encourages teens to develop their love of food and fellowship by taking cooking classes.  Youth of all levels of ability, interest, and experience from 8-16 years old are welcome in Chef Joel’s “Kids” cooking classes.  If you have any questions about whether classes are appropriate for your son or daughter, please contact Chef Joel.

Chef Joel has considerable experience working with individuals with special needs, including physical and developmental disabilities.  He feels strongly that all individuals can successfully participate in culinary classes and works hard with all students to ensure that they fully participate in each class.  If your teen has special needs, please let us know ahead of time so that Chef Joel can make sure to accommodate them.

SPECIAL CULINARY EVENTS FOR TEENS –

LOCATION –

Teen cooking classes are generally held at St. Mark’s Lutheran Church, 605 Spruce St., Madison, 53715.

Class are held in the kitchen, which is in the basement.  Please enter the building from the north side entrance (from Spruce Street), by the playground.  There will be a sign on the door for the cooking classes.

PARKING –

There should plenty of street parking available.  There is also a small parking lot behind the building, accessible from Hickory Street.

DRESS CODE –

  • Participants are strongly encouraged to wear a facial mask for Covid-19 prevention.
  • Long Hair should be pulled back or put in a ponytail.
  • Participants must wear close-toed shoes.
  • Short-sleeved shirts are recommended.
  • Hemmachef will provide aprons and towels to use during the class.

EQUIPMENT –

All equipment, foods, and materials necessary to complete the recipes are provided by Chef Joel.

CONSIDERATIONS –

Please inform Chef Joel of any of the following:

  •         Food allergies or restrictions, such as celiac disease, lactose-intolerance, etc.
  •         Special Physical Needs
  •         Special Educational Needs

CLASS PHILOSOPHY –

Participants are expected to behave with civility and respect for the Chef, the other participants, the equipment, and the food.

PARENTS IN CLASS –

Parents and/or guardians are not encouraged to stay during teen cooking classes.  Please contact Chef Joel if you are a parent who feels your teen has special needs.

PHOTOGRAPHS –

Chef Joel or other Hemmachef representatives may take photographs during class for use in marketing and promotional materials.  No names or other personal information will be included in these photographs.

CLASS CANCELLATION POLICY –

Please inform Chef Joel as soon as possible if you will not be able to attend.  Your full class payment will be refunded up to 5 business days prior to the date of the class.  If you cancel after this time you will not receive a refund. You may have someone attend in your/your child’s place, however.

If Chef Joel must cancel for any reason, every effort will be made to reschedule the class, and if you cannot attend at the new time, you will receive a full refund.

INCLEMENT WEATHER –

Class will conducted unless City of Madison buses are not running due to inclement weather.
