Chef Joel offers classes specifically for Teens or Tweens/Teens.  These cooking classes are appropriate for youth ages 13-17 years old (Teen classes) and youth ages 11-16 (Tween/Teen classes).  If you have any questions about whether classes are appropriate for you/your child, please contact Chef Joel at hemmachef@gmail.com.

Teens are also very welcome in any of Chef Joel’s “Kids” classes.  Chef Joel keeps class sizes small and has students work together in small groups.  He generally groups kids by age and ability level and makes sure that everyone is challenged and kept busy in class.  All of our classes are hands-on and involve lots of cooking.  Kids/Tweens/Teens do the cooking!

Chef Joel encourages teens to develop their love of food and fellowship by taking cooking classes.  Youth of all levels of ability, interest, and experience from 8-16 years old are welcome in Chef Joel’s “Kids” cooking classes.  If you have any questions about whether classes are appropriate for your son or daughter, please contact Chef Joel.

Chef Joel has considerable experience working with individuals with special needs, including physical and developmental disabilities.  He feels strongly that all individuals can successfully participate in culinary classes and works hard with all students to ensure that they fully participate in each class.  If your teen has special needs, please let us know ahead of time so that Chef Joel can make sure to accommodate them.

SPECIAL CULINARY EVENTS FOR TEENS –

LOCATION –

Teen cooking classes are generally held at St. Mark’s Lutheran Church, 605 Spruce St., Madison, 53715.

Class are held in the kitchen, which is in the basement.  Please enter the building from the north side entrance (from Spruce Street), by the playground.  There will be a sign on the door for the cooking classes.

PARKING –

There should plenty of street parking available.  There is also a small parking lot behind the building, accessible from Hickory Street.

DRESS CODE –

  • Participants must wear a facial mask for Covid-19 prevention.
  • Long Hair should be pulled back or put in a ponytail.
  • Participants must wear close-toed shoes.
  • Short-sleeved shirts are recommended.
  • Hemmachef will provide aprons and towels to use during the class.

EQUIPMENT –

All equipment, foods, and materials necessary to complete the recipes are provided by Chef Joel.

CONSIDERATIONS –

Please inform Chef Joel of any of the following:

  •         Food allergies or restrictions, such as celiac disease, lactose-intolerance, etc.
  •         Special Physical Needs
  •         Special Educational Needs

CLASS PHILOSOPHY –

Participants are expected to behave with civility and respect for the Chef, the other participants, the equipment, and the food.

PARENTS IN CLASS –

Parents and/or guardians are not encouraged to stay during teen cooking classes.  Please contact Chef Joel if you are a parent who feels your teen has special needs.

PHOTOGRAPHS –

Chef Joel or other Hemmachef representatives may take photographs during class for use in marketing and promotional materials, with parental consent.  No names or other personal information will be included in these photographs.

CLASS CANCELLATION POLICY –

Please inform Chef Joel as soon as possible if you will not be able to attend.  Your full class payment will be refunded up to 5 business days prior to the date of the class.  If you cancel after this time you will not receive a refund. You may have someone attend in your/your child’s place, however.

If Chef Joel must cancel for any reason, every effort will be made to reschedule the class, and if you cannot attend at the new time, you will receive a full refund.

INCLEMENT WEATHER –

Class will conducted unless City of Madison buses are not running due to inclement weather.

JANUARY

1/21/22 (Fri) – 5:00-7:00pm – Teen Sushi & Soba

Sushi is fun to make, and it’s not just raw fish; it’s a way of preparing food.  In this hands-on cooking class, teens will learn techniques and ingredients for rolling sushi and will also prepare some delicious dishes with silky Soba (buckwheat) noodles.  (In this class, no raw fish will be used.)  Participants will first learn to make the traditional Japanese shari rice used for rolling sushi, then use it to make traditional and not-so-traditional rolls.   On the menu:  Shari Rice; Spicy Tuna Roll; California Roll with Pickled Ginger & Wasabi Soy Sauce; and Wisconsin Roll with Bratwurst, Cheddar & Mustard.  Also: Soba Noodle Cakes with Sweet Soy Sauce; and Miso Soup with Soba Noodles, Tofu & Vegetables.  Location: St. Mark’s.  Class Cost: $55.

1/28/22 (Fri) – 5:00-7:00pm – Teen Tex-Mex

In this fun, hands-on cooking class, teens will learn to make fresh tortillas from scratch, and will get to enjoy them as well as use them in other dishes.  These yummy Tex-Mex favorites are on the menu:  Handmade Flour Tortillas;  Tortilla Soup with Chicken and Cheddar;  Huevos Rancheros (“ranch eggs”);  and delicious crispy-fried Cinnamon Churros for dessert.  Location: St. Mark’s.  Class Cost: $55.

FEBRUARY

2/11/22 (Fri) – 5:00-7:00pm – Teen Pasta

Teens love pasta and love to learn to make it themselves.  They’ll spend a fun evening learning lots about pasta and making delicious handmade pastas.  Participants will learn the basics of making egg-based pasta dough from scratch, and will then learn how to roll and cut the dough into a variety of shapes including: Cavatelli (small hollow pasta shells); Orecchietti (small ear-shaped pasta); Pappardelle (large broad flat noodles); Quadrucci (little squares) and Fusilli (corkscrew pasta).  Participants will then learn to make these delicious (and different) sauces to enjoy tasting their pasta with: Agloi e olio (olive oil, garlic and Parmesan) and Carbonara (Bacon, egg and cheese).  Location: St. Mark’s.  Class Cost: $55.

3/4/22 (Fri) – 5:00-7:00pm – Teen International Vegetarian

In this fun, hands-on class, teens will learn to make and then enjoy these delicious international vegetarian dishes:  Vegetable Tikka Masala with Rice (Indian); Okonomiyaki (savory pancakes that are a popular street food from Osaka, Japan); Flammkuchen (scrumptious onion Alsatian “pizza” from South Germany and the Alsace region of France); and for dessert, Norwegian sugar cookies.  Location: St. Mark’s.  Class Cost: $55.

3/25/22 (Fri) – 5:00-7:00pm – Teen Ravioli

Ravioli is fun to make and delicious to eat, and learning to make their own fresh homemade ravioli could even inspire teens to cook for the whole family!  Teens will learn the techniques to make Fresh Homemade Egg Pasta dough and will then roll the dough out using a pasta machine.  The fresh pasta sheets will be used to make these delicious types of ravioli: Three Cheese ravioli; Italian Sausage and Bell Pepper Ravioli; and Spinach and Asiago ravioli.  Fresh homemade Alfredo Sauce and Marinara Sauce will also be prepared in class to taste with the pasta.  Location: St. Mark’s.  Class Cost: $55.

(3/28-4/1 – MMSD Spring Break)

3/28-31/22 (Mon-Thu) – 1:30-4:30pm — Teen Spring Break Camp (4 days): Techniques of French Cuisine

In this intensive hands-on camp, participants will focus on developing classic French culinary techniques that will enable them to cook any food well, ranging from sautéing and knife skills (chop, mince, dice, chiffonade, julienne, etc.) to French baking skills.  Teens will hone their culinary skills under the guidance of professional chef/highly-experienced culinary instructor Chef Joel while learning fun, new, delicious classic French recipes.  Participants of all skill levels are welcome (no prerequisites required), but should come expecting to be challenged and prepared to take their cooking up a notch!  Location: St. Mark’s.  Camp Cost: $255 per session.

  • Monday:  Oeufs à la Tripe (Eggs with Onion sauce); Pommes Miette (Sautéed potato cubes); Marmite Dieppoise (Fish soup with cream and onions); Petites Gateaux de Carottes (Little carrot custards); Classic French Bread; Pains de la Mecque (Mecca Buns).
  • Tuesday:  Salade Nicoise (Nicoise Salad); Poulet Sauté aux Herbes de Provence (Chicken Sautéed with Herbs and Garlic); Riz à la Bernoise (Rice with mirepoix and ham); Biscottes (French Biscotti).
  • Wednesday:  Crème de Celeri (Cream of celery soup); Bifteck Haché à la Lyonnaise (Beef Patties with Onions and Herbs); Pommes de Terre Duchesse (Baked Mashed potatoes with egg); Ficelle (Bread); Toasts Aux Pommes Meringuées (Toasted apple meringues).
  • Thursday:  Quiche Lorraine (Ham and cheese quiche); Petite Poule au Blanc (Chicken with crème Fraiche); Salade de Pommes de Terre à L’Huile (French Potato Salad with Oil and Vinegar); Concombres Sautés (Sautéed Cucumbers); French Lemon Tart.  Location: St. Mark’s.  Camp Cost: $255.

3/28/22 (Mon) – 5:00-8:00pm – Teen/Tween/Kids international Breads

If you love baking and especially bread-making, this class is for you!  Participants will practice basic baking techniques–measuring, stirring, kneading, proofing and working with yeast.  Then they will prepare a variety of tasty breads of different types from different cultures/countries to enjoy in class, and they’ll get to take some home with them, too.  On the menu:  Grisini (Italian breadsticks); Classic Welsh Cakes; Pandabono (Columbian cheese bread); Pampushky (Ukrainian garlic bread); and Japanese An Pan (filled sweet rolls).  Location: St. Mark’s.  Class Cost: $65.
