Chef Joel offers classes specifically for Teens or Tweens/Teens.  These cooking classes are appropriate for youth ages 13-17 years old (Teen classes) and youth ages 11-16 (Tween/Teen classes).  If you have any questions about whether classes are appropriate for you/your child, please contact Chef Joel at hemmachef@gmail.com.

Teens are also very welcome in any of Chef Joel’s “Kids” classes.  Chef Joel keeps class sizes small and has students work together in small groups.  He generally groups kids by age and ability level and makes sure that everyone is challenged and kept busy in class.  All of our classes are hands-on and involve lots of cooking.  Kids/Tweens/Teens do the cooking!

NOTE TO VEGETARIANS:  Classes have been designated according to their appropriateness for vegetarians:

  • the class is vegetarian (V)
  • meat is optional; can easily be left out of menu item(s) (VO)

Chef Joel encourages teens to develop their love of food and fellowship by taking cooking classes.  Youth of all levels of ability, interest, and experience from 8-16 years old are welcome in Chef Joel’s “Kids” cooking classes.  If you have any questions about whether classes are appropriate for your son or daughter, please contact Chef Joel.

Chef Joel has considerable experience working with individuals with special needs, including physical and developmental disabilities.  He feels strongly that all individuals can successfully participate in culinary classes and works hard with all students to ensure that they fully participate in each class.  If your teen has special needs, please let us know ahead of time so that Chef Joel can make sure to accommodate them.

Teen cooking classes are generally held at St. Mark’s Lutheran Church, 605 Spruce St., Madison, 53715.

Class are held in the kitchen, which is in the basement.  Please enter the building from the north side entrance (from Spruce Street), by the playground.  There will be a sign on the door for the cooking classes.


There should plenty of street parking available.  There is also a small parking lot behind the building, accessible from Hickory Street.


  • Participants are strongly encouraged to wear a facial mask for Covid-19 prevention.
  • Long Hair should be pulled back or put in a ponytail.
  • Participants must wear close-toed shoes.
  • Short-sleeved shirts are recommended.
  • Hemmachef will provide aprons and towels to use during the class.


All equipment, foods, and materials necessary to complete the recipes are provided by Chef Joel.


Please inform Chef Joel of any of the following:

  •         Food allergies or restrictions, such as celiac disease, lactose-intolerance, etc.
  •         Special Physical Needs
  •         Special Educational Needs


Participants are expected to behave with civility and respect for the Chef, the other participants, the equipment, and the food.


Parents and/or guardians are not encouraged to stay during teen cooking classes.  Please contact Chef Joel if you are a parent who feels your teen has special needs.


Chef Joel or other Hemmachef representatives may take photographs during class for use in marketing and promotional materials, with parental consent.  No names or other personal information will be included in these photographs.


Please inform Chef Joel as soon as possible if you will not be able to attend.  Your full class payment will be refunded up to 5 business days prior to the date of the class.  If you cancel after this time you will not receive a refund. You may have someone attend in your/your child’s place, however.

If Chef Joel must cancel for any reason, every effort will be made to reschedule the class, and if you cannot attend at the new time, you will receive a full refund.

9/30 (Fri) – 5:30-7:30pm –Teen/Tween Vegetarian Pizza Party   (V)

Participants will start by making a delicious homemade whole wheat pizza dough as well as a gluten-free pizza dough.  Then they will set fresh tomato sauce to simmering and prep toppings/fillings to make and bake personal pizzas from scratch.  Classic pizza ingredients will be prepared–including a variety of sautéed vegetables and cheeses—and fun alternative ingredients will also be explored: Pickle pizzas; Mac n’ cheese pizzas; Sweet Potato & Cheddar Pizzas.  A fun Strawberry & Chocolate dessert pizza will also be made.  Location: St. Mark’s.  Class Cost: $60.

10/4 (Tue) – 5-7pm – Teen Stuffed Pastas   (V)

In this fun hands-on class, teens will learn to prepare classic egg pasta dough, and will prepare these delicious stuffed pasta dishes:  Three-Cheese Stuffed Rigatoni with Creamy Basil Sauce;  Spinach and Ricotta Stuffed Shells with Fresh Marinara Sauce;  Eggplant Parmesan Ravioli;  and  Zucchini, Roasted Red Pepper and Mozzarella Stuffed Cannelloni with Alfredo Sauce.  Location: St. Mark’s.  Class Cost: $55.

10/8 (Sat) – 3-5:30pm – Teen/Tw/Kids Fall Baking   (VO)

This is a wonderful, completely hands-on class for youth who love to bake!   This class will add to participants’ baking repertoire with some traditional French patisserie, along with delicious new recipes and techniques for sweet as well as savory dishes.   Participants will make and bake the following recipes (and they will get to take some home to enjoy with friends and family).  On the menu:  Caramelized Tomato Tarts with Cheddar Crust;  Apple and Caramel Mousse Napoleons with Puff Pastry;  Pepperoni and Mozzarella Phyllo Puffs with Marinara Dipping Sauce;  Candied Orange and Chocolate Crisps;  and Cranberry and Pear Tart Tatin with Tart Dough and Crème Chantilly.  Location: St. Mark’s.  Class Cost: $60.

11/4 (Fri) – 5-7pm – Teen Pumpkin Fest!     (V)

Who doesn’t love pumpkin and pumpkin spice?  It’s the Flavor of Fall!  If you look forward to fall just so you can eat all-things pumpkin, this is the class for you!  On the menu:  deliciously smooth Pumpkin Bisque with buttery Pumpkin Cheddar Biscuits;  Pumpkin Ravioli with savory Sage Butter: and scrumptious Pumpkin Tartlets with Candied Ginger and Cranberry Crème Chantilly.  Location: St. Mark’s.  Class Cost: $60.

11/5 (Sat) – 12:30-2:30pm  – Teen/Tw/Kids Fall Pies and Tarts   (V)

Participants will learn to make delicious sweet and savory tarts and pies have a chance to work with different doughs, including Chef Joel’s favorite Tart Dough.  They will get to sample the fruits of their labor in class plus take home some of each.  On the menu: Rustic Leek Tart; Herbed Potato Hand Pies; Autumn Pear Tart; Brown Sugar and Sweet Potato Tart; and Salted Caramel and Apple Pie.  Location: St. Mark’s.  Class Cost: $60.

11/7 & 11/14 (Mon) – 3:30-5:30pm – Eat Right!—Cooking, Manners & Etiquette for Youth, Parts 1 & 2   (V)

Want to improve poor eating habits—and have Chef Joel explain proper table manners that are bound to impress?  Sign up now for this fun and effective etiquette course and let Chef Joel teach the how’s and why’s of good etiquette.  Chef Joel has been teaching this highly popular, effective and ever-evolving class for over twenty years.  It is designed for youth ages 10-15.  Over the two-class session, students will learn basic culinary techniques while discussing the concepts and rules of manners and etiquette.  They will help to prepare a four-course meal, help to serve the food restaurant-style, and then sit and enjoy the rewards of their labor.  While they dine and share, their dining etiquette will be critiqued by Chef Joel in a fun and productive manner.  Recipes and handouts will be presented at the end of class 2.  Topics:  Common Courtesy; Manners and Etiquette 101; Guest and Host.   On the Menu:

Class One (11/7):  Tomato and Cheese Empanadas; Vegetable Paella; Spanish Mantecado (Sugar Cookies)

Class Two (11/14):  Fresh-Baked Bread and Butter; Potato and Corn Chowder; Garden Salad with Choice of Homemade Italian or French Dressing; Sweet Potato and Spinach Wellingtons with Silky Tomato Cream Sauce, Rice Pilaf, Vegetable Garnish; Fruit Napoleons with Crème Chantilly.

11/8 (Tue) – 5-7pm – Teen Indian Vegetarian   (V)

Learn to cook some savory, sweet, spicy (but not too!), delicious South Asian vegetarian favorites to enjoy now and impress your friends with later!  Teens do all the cooking in this fun, hands-on class – practicing culinary skills while making these wonderful vegetarian Indian dishes:  Spicy Sweet Potato and Pea Samosas with Coriander and Mint Chutney; Chana Masala (chickpea, tomato, and onion stew in a mouth-watering Masala sauce); Dal Makhani (lentils cooked with butter); Pulao (Indian rice pilaf); fresh, hot, homemade Naan bread; and Sevaya Kheer (pasta and milk pudding with golden raisins).  Location: St. Mark’s.  Class Cost: $55.

11/15 (Tue) – 5-7pm – Teen/Tw/Kids Vegetarian Spring Rolls, Potstickers and Wontons   (V)

Wontons, Potstickers and Spring Rolls are all fun to make and delicious to eat!  In this class, participants will learn to make all three of these fun savory treats, with some traditional flavors as well as some fun twists.  On the menu:  Rice Noodle and Asian Vegetable Spring Rolls with Sweet Ginger and Soy Dipping Sauce;  Oven-Fried Mashed Potato and Cheddar Spring Rolls with Herbed Gravy Dipping Sauce; Butternut Squash Pot Stickers with Brown Butter Dipping Sauce;  Crispy Spinach, Rice and Feta Wontons with Creamy Lemon Dipping Sauce;  and scrumptious Cinnamon Apple Wontons with Caramel Dipping Sauce for dessert.  Location: St. Mark’s.  Class Cost: $55.

11/29 (Tue) – 5-7pm – Teen Vegetarian Sushi and Soba   (V)

In this hands-on cooking class participants will learn to make several types of tasty vegetarian sushi, featuring not only traditional Japanese flavors, but also fun innovative flavors, as well as a delicious dish with Soba (buckwheat) noodles.  Class will start with the basics of preparing Shari rice, which is essential for any type of sushi (as “sushi” actually refers to the rice).  Teens will then learn how to make sushi rolls with traditional sushi mats, and will make several different sushi rolls, as well as other types of sushi.  On the menu:  Roasted Sweet Potato and Baby Kale Roll; Wisconsin Cheddar and Apple Roll; Gingered Soba and Roasted Eggplant Roll; Silky Roasted Bell Pepper Nigiri; along with customary sushi accompaniments of pickled ginger (gari), wasabi, and soy sauce; as well as Soba Noodle Cakes with Sautéed Asian-Style Vegetables and Mirin Soy sauce.  For dessert, scrumptious Green Tea Cookies.  Location: St. Mark’s.  Class Cost: $60.

12/2 (Fri) – 5-7pm – Teen Chocolates   (V)

Calling all chocoholics – as well as anyone who appreciates delicious homemade chocolate treats!  In this hands-on class, teens will learn about cooking with chocolate and will make these scrumptious chocolate treats to enjoy in class as well as to take some home to share (or not!).  On the menu: Chocolate Orange Coconut Bon Bons; German Chocolate and Cherry Cookies with Piped Chocolate Lattice; White Chocolate Mousse with Berry Sauce; and Chocolate and Peppermint Pastilles.  Location: St. Mark’s.  Class Cost: $60.

12/6 (Tue) – 5-7pm – Teen Holiday Gifts from the Kitchen   (V)

Want to be able to give meaningful homemade holiday gifts that are sure to impress?  In this class, teens will learn about a variety of great recipes and ideas for fun, easy and delicious homemade gifts that they will be able to prepare at home to give to friends and family.   Participants will learn how to make many different types of homemade gifts, and will prepare several specific recipes.  Recipes will be sampled by participants, and some samples will be sent home with each teen.  Topics covered will include:  Infused Oils and Vinegars;  Fruit Butters;  Jams and Jellies;  Pickles;  Quick Breads;  Yeast Breads;  Spice Rubs, Blends and Marinades; and soup mixes.  Specific recipes to be prepared are:  Homemade Movie House Popcorn Oil with Popcorn Packets and Cheesy Popcorn Sprinkle;  Focaccia Tiles with Pizza Oil Dipping Sauce;  Pickled Roasted Pepper Spread with Fresh Buttery Bread Sticks;  Four Bean Vegetarian Chili Kit with Homemade Chili Powder;  Crisp Flatbread with Cinnamon Apple Butter;  Herb and Fruit Jelly with Cream Biscuits.  Location: St. Mark’s.  Class Cost: $60.

12/9 (Fri) – 5-7pm – Teen Holiday Treats   (V)

Teens will enjoy learning to make delicious, homemade holiday treats that can be gifted, shared or consumed immediately!  Participants will prepare the following recipes and will be able to take some home (if there are any left): Baby Bûche de Noël with Chocolate Frosting; Classic Holiday Gingerbread Cookies; Chocolate Peppermint Jingle Balls; and Savory Sweet Potato and Cranberry Crisps.  Location: St. Mark’s.  Class Cost: $60.

12/21 (Wed) 10am-12:30pm – Youth Holiday Baking    (V)   [MMSD Winter Break]

If your child/tween/teen loves to bake, they will love this class!  Participants will practice basic baking techniques–measuring, stirring, kneading, proofing and working with yeast.  Then they will bake a variety of tasty goods, good enough to grace any Holiday table or to give as gifts!  On the menu:  Mini-Cinnamon Apple Pull-Apart Rolls with Cinnamon Glaze;  Peppermint Candy Sugar Crisps with Wintergreen Icing; Gooey Chocolate and Cherry Turnovers;  Aunt Jo’s Holiday Morning Orange and Chocolate Chip Scones.  Location: St. Mark’s.  Class Cost: $60.
