    Kids will learn to make delicious sweet and savory tarts and have a chance to work with different doughs: Pâte Brisée, Pâte Sablée, and Chef Joel’s favorite Tart Dough.  They will get to sample their tarts in class plus take home some of each.  On the menu: Tomato, Zucchini and Mozzarella Tarts; Potato and Cheddar Tarts; Caramelized Apple and Cranberry Tarts; and Chocolate Tarts with Strawberry Crème Chantilly.  Location: St. Mark’s.  Class Cost: $50.

    If your child loves baking and especially bread-making, this class is for them!  Kids will practice basic baking techniques–measuring, stirring, kneading, proofing and working with yeast.  Then they will prepare a variety of tasty breads of different types from different cultures/countries to enjoy in class.  They’ll get to take some home with them, too!  On the menu:  English Muffins; Irish Soda Crackers; Japanese Hokkaido Milk Bread; Italian Focaccia; Middle Eastern Khobz Flatbread.  Location: St. Mark’s.  Class Cost: $50.

    Empower your child to help with the cooking by learning real knife skills/techniques that will stay with them for as long as they cook!  Children are great at chopping, dicing and mincing when they learn the proper techniques and safety guidelines.  Kids will practice cutting a variety of fruits, vegetables, and bread.  They will learn special techniques for cutting onions, carrots, peppers and other vegetables, as well as learning how to paste garlic, mince parsley, and make chiffonade of lettuce.  Sign them up now for this intense hands-on life skills lesson with Chef Joel!  A light meal will be served during class but Chef Joel recommends participants have a snack before class.  Location: St. Mark’s.  Class Cost: $40.

    Tired of watching (and listening to) poor eating habits?  Tired of trying to correct your kids’ dining behavior unsuccessfully?  Sign up now for this highly popular and effective etiquette course and let Chef Joel teach them the how’s and why’s of good etiquette.  Chef Joel has been teaching this highly popular, effective and ever evolving etiquette class for over twenty years. It is designed for kids ages 10-15.  Students will prepare a variety of foods for a four course meal while discussing the concepts and rules of manners and etiquette.  They will help to serve the food restaurant-style and then sit and enjoy the rewards of their labor.  While they dine and share, their dining etiquette will be critiqued by Chef Joel in a fun and productive manner.  Recipes and handouts will be presented at the end of class.  Topics:  Common Courtesy; Manners and Etiquette 101; Guest and Host.   On the Menu:  Bread and Butter Basket; Vegetarian Minestrone Soup; Garden Salad; Turkey Meatballs with Fresh Tomato Sauce and Noodles; Scandinavian Sugar Cookie Napoleons with Crème Chantilly and Fruit.  Location: St. Mark’s.  Class Cost: $60.

    What a great way to spend a fall Saturday morning with your child, grandchild or special friend.  Learn the techniques of making Fresh Egg Pasta and rolling it out using a pasta machine.  Fresh pasta sheets will then be used to make hand-shaped Farfalle, Garganelli and Maltagliati pasta.  Alfredo Sauce and Marinara Sauce will also be prepared in class to taste with the pasta.  Location: St. Mark’s.  Class Cost: $75 per parent-child pair (each additional child is $35).
