In this workshop, kids will learn the basics of these classic French doughs– Pâte à Choux, two different tart doughs and French Bread dough–as well as other culinary skills such as learning how long it takes to properly caramelize onions.  Some of each batch will be sent home with each participant to show off their newly found or honed skills!  On the menu: Gougères (Cheesy Poofs); Pissaladierre with Pâte Brisée (French Onion Tart with Classic Flakey Pastry); Ficelles (Mini- Baguettes); Chocolate and Raspberry Tart with Pâte Sablée (Sweet Tart Dough).  Location: St. Mark’s.  Class Cost: $55.

    Make delicious French pastries with a special child!  In this class, Adult-Child pairs will learn to make Pâte à Choux, the pastry dough used in many classic French pastries, as well as crème pâtissière, the thick French pastry cream used for filling pastries.  Also Chocolate Ganache, delicious chocolate cream used for pastry fillings and truffles, too.  Pairs will then learn how to put all of these recipes together to make Profiteroles (or choux à la crème).  Pairs will also make Beignets, classic French-style doughnuts from New Orleans.  On the menu:  Classic Beignets with Powdered Sugar; Pâte à Choux; Crème Pâtissière; and Chocolate Ganache.  Location: St. Mark’s.  Class Cost: $75 per parent-child pair (each additional child is $35).

    Try a taste of Hawaii – without the airfare!  You’ll love the sweet-and-salty flavors of many Hawaiian dishes.  On the menu:  Spam and Kimchi Musubi (Yes, a Spam and mild Kimchi sushi roll that’s really popular all over the Islands); Polynesian Chopped Salad with Miso Dressing; Huli Huli Chicken (soy, ginger and garlic marinated chicken); Hawaiian Macaroni Salad; Hawaiian Bread; and Coconut Tartlets for dessert.  Location: St. Mark’s.  Class Cost: $50.

    Empower your child to help with the cooking by learning real knife skills/techniques that will stay with them for as long as they cook!  Children are great at chopping, dicing and mincing when they learn the proper techniques and safety guidelines.  Kids will practice cutting a variety of fruits, vegetables, and bread.  They will learn special techniques for cutting onions, carrots, peppers and other vegetables, as well as learning how to paste garlic, mince parsley, and make chiffonade of lettuce.  Sign them up now for this intense hands-on life skills lesson with Chef Joel!  A light meal will be served during class.  Location: St. Mark’s.  Class Cost: $40.

    Try some new, international flavors from these two cultures with amazing culinary offerings.  Persian food, like Persian culture, has been around since the dawn of civilization and incorporates a great range of spices and foods.  Jamaican cuisine is also amazingly varied and has incorporated influences from all of the many cultures who’ve been on the island, including indigenous people, the Spanish, Irish, British, Africans, Indian and Chinese.  Location: St. Mark’s.  Course Cost: $100.

    Day One:  Jamaican: Menu:  Jamaican Meat Pies (fresh-made pastry filled with a flavorful, savory mixture of meat and vegetables); Stamp and Go (Salt Cod fritters); Jerk Chicken with Black Beans and Rice; Fried Sweet Plantains; Mango Mousse with Island Spiced Sugar Cookies.

    In this class kids will learn to make homemade cheese from scratch (well, actually from milk)!  Basic principles of cheese-making and materials will be discussed.  Kids will then make cheese and will use their freshly-made cheeses to make a delicious dinner.  On the menu:  Quick Mozzarella; Queso Blanco; and Whole Milk Ricotta Cheeses.  Also, Grilled Mozzarella and Herb Sandwiches; Tostadas with Queso Blanco; Ricotta Cannoli Dip with Sugar Crisps.  Location: St. Mark’s.  Class Cost: $50.

    Nigerian cuisine contains dishes and food items from the hundreds of ethnic groups that comprise this West African country and features colorful and lavish dishes, with deeply flavored sauces and soups from the many native spices and herbs.  On the menu:  Nigerian Sausage Rolls (hand-mixed ground beef with nutmeg wrapped in fresh-made dough); Nigerian Egg Rolls (hard-boiled eggs wrapped in bread dough then fried); Jellof Rice (spiced rice with stewed tomatoes); Nni Oka (corn Fufu, which has a texture like mashed potatoes) served with Meatball Stew; and Nigerian Banana Cake for dessert.  Location: St. Mark’s.  Class Cost: $50.
