Successfully rolling sushi is one of those “Ooh and Ah” moments in cooking.  In this class, you will learn to prepare dashi (seaweed stock) for Classic Miso Soup, along with sushi-rolling techniques and ways of prepping a variety of filling ingredients.  You will learn the secrets of preparing Shari rice and then learn how to make several kinds of Sushi Maki and even Futo Maki (Fat) Rolls.  On the menu: Classic Miso Soup; California Rolls; Milwaukee Rolls; Spicy Tuna Rolls; Nigiri,; Edamame and more!  Location: St. Mark’s.  Class Cost: $65.

    Why do some food and wine combinations dance gracefully on your palate and others stand around and disagree? Learn the basic characteristics of three major white wine varieties: Chardonnay, Riesling and Sauvignon Blanc. Taste these wines along with examples of sweet, salty, bitter and sour foods, plus herbs and spices, examining the role of umami in wine and food pairings as well.     “There is Nothing to Eat!”  Learn to recognize that there usually is plenty to eat; it just may take a little thought, effort and maybe a little time as well.  In this dynamic, 6-hour hands-on workshop, students will learn essential techniques that will build a culinary foundation for preparing a wide variety of dishes.  Chef Joel will cover:

    • flavor profiles — the balance of essential flavors (i.e. sweet, sour, bitter, salt) in any dish, and also herbs and spices associated with different cuisines;
    • essential culinary techniques, including knife skills, sautéing, sweating, etc.;
    • basic recipes for stocks, sauces, etc. that can provide a foundation for many different more complex dishes;
    • what “staple” items to always have in your pantry;
    • great ways to make the most of leftovers to make it seem like you are not eating leftovers.

    In the first half of the class, Chef Joel will cover a large variety of cooking techniques and basic recipes, while demonstrating the preparation of a simple meal.  In the second half, after a short breather, participants will break into small groups and begin developing recipes for a menu to utilize a variety of ingredients–some familiar and some new, including proteins, dairy, vegetable and pantry items that will be on hand.  Students will have the opportunity to use their new culinary knowledge to create a variety of gourmet appetizers, entrées and desserts.  Come play in the kitchen and create your own masterpieces!  Learn the techniques and methods needed to set the foundation for cooking without a recipe.  Location: St. Mark’s.  Cost: $165

    Kids should be prepared to take their cooking to the next level without having to worry about getting “Chopped” in this fun, challenging workshop.  Instead of complaining, “There is Nothing to Eat!,” kids will learn to recognize that there is usually plenty to eat, it will just take a some thought, effort and a little time.  After a quick overview of flavor profiling and general cooking principles, participants will team up in small groups and come up with a plan to cook a variety of dishes using the ingredients on hand.  Each participant will get to make something they have come up with.  Options will include vegetarian and gluten-free items.  (Other dietary concerns will be considered upon request.)  The class will emphasize practicing safe knife skill and kitchen skills while keeping workspaces clean and organized.  This is not a class for beginning cooks.  Participants should have the ability to read and understand recipes and think in terms of what should be started first when preparing a meal.  Location: St. Mark’s.  Class Cost: $60.

    Noodles for breakfast?  Noodle Salad?  Noodles for Dessert?  Yes indeed—You’ve got to try it to believe it!  Adult-child pairs will work together to prepare and then get to eat:  Baked Egg Noodle Mini-Frittatas with Bacon and Herbs; Shanghai Noodle Salad with Sweet Peppers and Scallions; and Birds Tongue Dessert (Spaghetti cooked with Golden Raisins and Milk).  Location: St. Mark’s.  Class Cost: $75 per parent-child pair; each additional child is $35.

    Celebrate the culture and cuisine of Mexico for Cinco de Mayo!  Teens will learn to make these Mexican favorites: Classic Tortilla Soup with Hand Rolled Tortilla Chips and Queso Blanco; Mexican Chopped Vegetable Salad with Honey Lime Dressing; Chicken and Cheese Tostadas with Pico de Gallo; and Cinnamon Churros (Crullers).  Location: St. Mark’s.  Class Cost: $50.

    Fan of Great British Baking?  This class is for you!   Kids will learn to bake more classic British favorites and enjoy tasting them.  (Great British Baking for Kids: I and II are not prerequisites for this class.)  On the menu:  Shepard’s Pie; Irish Soda Crackers; Sausage Rolls; Cornish Farings (Ginger Biscuits); and Treacle Tart.   Location: St. Mark’s.  Class Cost: $50.
