Irish Soda Bread

There is nothing like a good soda bread on a warm spring day. Bake it until it sounds hollow when thumped with your thumb.

Irish Soda Bread
6 cups all purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
3 tablespoons cornstarch
1 teaspoon salt
2 ½ cups buttermilk

Method: Preheat the oven to 375 F. Combine all the dry ingredients. Add the buttermilk and stir until the dough comes away from the sides. Pour onto a clean surface and knead gently until smooth. Divide the dough as desired. Form into round loaves. Sprinkle with a little flour and cut the shape of a cross on top of each. Place on a parchment lined sheet tray. Let rise ten minutes and bake 15-20 minutes until done.
