This is the best cooking class your child will ever take!  Knife skills are fundamental culinary skills that can always be improved, whether kids have loads of or no cooking experience.  And if your child is just beginning to be interested in cooking, making sure that they learn proper, safe knife skills is the best way to start.  Chef Joel will teach real knife skills and techniques and will have kids practice, practice, practice so these knife skills will stay with them for as long as they cook!  Children are great at chopping, dicing and mincing when they learn the proper techniques and safety guidelines.  Kids will practice cutting a variety of fruits, vegetables, and bread.  They will learn special techniques for cutting onions, carrots, peppers and other vegetables, as well as learning how to paste garlic, mince parsley, and make chiffonade of lettuce.  Sign them up now for this intense hands-on life skills lesson with Chef Joel!  A light meal will be served.  Location: St. Mark’s.  Class Cost: $40.

    Sushi is fun for kids to make, and it’s not just raw fish; it’s a way of preparing food.  In this class, kids will learn to prepare dashi (seaweed stock) for Miso Soup, along with learning sushi techniques and ingredients.  Kids will prepare Shari rice and learn how to roll sushi to make several kinds of rolls.  On the menu:  Miso Soup with Shrimp and Peas; California Rolls, Wisconsin Rolls; Spicy Tuna Rolls, and Inside-Out Rolls.  (In this class, no raw fish will be used.)  Kids will also prepare Sesame cookies for dessert.  Location: St. Mark’s.  Class Cost: $45.

    No packets of skinny noodles and pouches of MSG in this class!  Kids will learn to make noodle dough from scratch, then roll, stretch and cut the dough into fresh noodles to be boiled and enjoyed with a variety of classic ramen ingredients. Learn the basic characteristics of three major white wine varieties: Chardonnay, Riesling and Sauvignon Blanc. Taste these wines along with examples of sweet, salty, bitter and sour foods, plus herbs and spices, examining the role of umami in wine and food pairings as well. Participants help to prepare: Fresh Spinach and Herb Salad with Goat Cheese and Spicy Tomato and Corn Salsa; Crisp Roasted Eggplant with Buttermilk Sauce and Cranberries; Fried Plantains with Sweet Potato and Kale Thai Green Curry; Fruit and Chocolate. Then participants discover and discuss (in approachable language) what works for them as they taste the food they helped to make along with two different wines of each varietal.

    Kids love to decorate cakes and this class will allow them to showcase their creativity, as well as learning baking skills.  They will make a classic Roulade from scratch as well as butter cream frosting.  Each child will then assemble and decorate their cake to take home with them.  Basic cake making skills (egg separating, batter folding, and preparing pans for baking) will be covered.  A variety of fun decorations will be provided.  Location: St. Mark’s.  Class Cost: $45.
