Complete all 5 steps of the Cadette New Cuisines Badge under the guidance of Culinary Instructor/Professional Chef Joel Olson of Hemmachef. Discuss the myriad of culinary traditions and options available to an adventurous cook and learn culinary skills while preparing 4 dishes: Vietnamese Summer Rolls; Vegetable Muffuletta Sandwiches; Fresh Fruit Vintage Smoothies; and Homemade Macaroni and Cheese. Participants will then “share their dishes on a Culinary Tour” by creating a buffet of the dishes to be enjoyed by all of the participants. (NOTE: All dishes are Nut-free and Vegetarian; most are Dairy-free.) Register by November 5. Location: St. Mark’s. Class Cost: $25.

    Learn how to make great fun food to eat with your hands!  Pocket pies were the original “bag lunches,” without the bag! – a whole meal you could put in your pocket and take out and eat when you were hungry.  Kids will help to prepare then enjoy the following variety of sweet and savory pies:  Jamaican Chicken and Vegetable Pocket Pies; Australian Beef and Caramelized Onion Pies; Ham and Cheese Fidget Pies; Salted Caramel Apple Pocket Pies.  Location: St. Mark’s.  Class Cost: $50.

    Tired of watching (and listening to) poor eating habits?  Tired of trying to correct your kids’ dining behavior unsuccessfully?  Sign up now for this highly popular and effective etiquette course and let Chef Joel teach them the how’s and why’s of good etiquette.  Kids will help to prepare a four-course meal, while discussing the concepts and rules of manners and etiquette. Then they will learn how to properly serve food, and will get to sit and enjoy the rewards of their labors while their dining etiquette is critiqued by Chef Joel in a fun and productive manner.  Recipes and handouts will be presented at the end of class.     Take this very popular and informative class to learn and practice the techniques that help take the chore out of cooking. Techniques include: boning a chicken, dicing onions, carrots and other vegetables, pasting garlic, plus peeling and cutting fruit and chiffonade of leafy herbs and greens.     Wonderfully velvety mushroom soup redolent with red wine and smooth creamy Brie

    2ND COURSE:  Baby Greens Salad with Crab Croquettes and Chardonnay Vinaigrette  (Chardonnay Pairing)

    Delicately Fried Crab Cakes served on a bed of baby greens with a light crisp Chardonnay Vinaigrette

Kids will make egg pasta dough for several different types of pasta, including Valentine Red (Tomato) pasta. They will learn to use a pasta machine to roll the dough out and cut it to make Angel Hair and Fettuccine and then will make pasta sheets for variety of flat pastas, including Farfalle and Maltagliati. Alfredo Sauce and Marinara Sauce will also be prepared in class to taste with the pasta. Participants will be able to bring home the uncooked pasta they have made. Location: St. Mark’s. Class Cost: $45.

    Make delicious French pastries with a special child! In this class, Adult-Child pairs will learn to make Pâte à Choux, the pastry dough used in many classic French pastries, as well as crème pâtissière, the thick French pastry cream used for filling pastries. Also Chocolate Ganache, delicious chocolate cream used for pastry fillings and truffles, too. Pairs will then learn how to put all of these recipes together to make Profiteroles (or choux à la crème). Pairs will also learn to make Beignets, classic French-style doughnuts from New Orleans and then will get to sample a savory twist on this classic, too. On the menu: Pâte à Choux; Crème Pâtissière; Chocolate Ganache; Classic Beignets with Powdered Sugar; and Savory Shrimp Beignets. Location: St. Mark’s.
