5/3 (Fri) –5:30-8:00pm – Sweet, Sweeter, Sweetest”– Teen Dessert Class

You don’t’ have to have a Sweet Tooth to enjoy this class, but if you do you’ll love it!  Teens will learn a myriad of techniques, use a multitude of ingredients and tap into their sometimes hidden sweet side as they prepare fabulous springtime-inspired desserts.  They will get to taste them all and bring some home to share (or not!).  On the menu: Baked Alaska; Banana Cream Tartlets; Chocolate Mint Pudding; Lemon Mousse with Berries; and Shortbread with Raspberry and White Chocolate.  Location: St. Mark’s.  Class Cost: $50.

5/4 (Sat) — 1:00-3:30pm – “National Hoagie Day Celebration”: Tweens and Teens Make Hoagies

Hoagies, Heroes or Subs–call them what you want, but there is nothing like a great big sandwich!  Tweens and teens will celebrate National Hoagie Day deliciously in this fun class.  They will begin by making the dough for the bread that will be used to make hoagies.  While the dough is rising and baking, they’ll help to prepare the ingredients for a hoagie bar that they will use to assemble hoagies to wrap and enjoy!  Hoagie options include: Oven Roasted Vegetable, Parmesan and Pesto Hoagies; Goat Cheese, Cucumber and Tomato Hoagies; Turkey Meatball, Mozzarella and Marinara Hoagies; and Tuscan-style Chicken, Peppers, Onion and Swiss Hoagies.  Location: St. Mark’s.  Class Cost: $50.

4/20 (Sat) — 1:00-3:30pm – Kids Tarts

Kids will learn to make delicious sweet and savory tarts and have a chance to work with different doughs: Phyllo Dough, Puff Pastry, and Chef Joel’s favorite Tart Dough.  They will get to sample their tasty tarts in class plus take some home.  On the menu:  Roasted Tomato and Mozzarella Tarts; Sweet Onion and Cheddar Tarts; Chocolate and Cherry Tartlets; and Banana and Caramel Tarts.  Location: St. Mark’s.  Class Cost: $50.

4/23 (Tues) — 4:00-6:00pm – Kids Knife Skills

Empower your child to help with the cooking by learning real knife skills/techniques that will stay with them for as long as they cook! Children are great at chopping, dicing and mincing when they learn the proper techniques and safety guidelines. Kids will practice cutting a variety of fruits, vegetables, and bread. They will learn special techniques for cutting onions, carrots, peppers and other vegetables, as well as learning how to paste garlic, mince parsley, and make chiffonade of lettuce. Sign them up now for this intense hands-on life skills lesson with Chef Joel! A light meal will be served during class but Chef Joel recommends participants have a snack before class. Location: St. Mark’s. Class Cost: $40.

5/4 (Sat) — 9:30am-12:00pm – Kids Pasta Workshop

Kids will learn the techniques of making their own homemade fresh pasta from scratch and will get to enjoy the fruits of their labor in class as well as take some home to share.  Kids will make egg pasta dough for several different types of pasta.  They will learn to use a pasta machine to roll the dough out and cut it to make Angel Hair and Fettuccine and then will make pasta sheets for variety of flat pastas, including Farfalle and Maltagliati.  Alfredo Sauce and Marinara Sauce will also be prepared in class to taste with the pasta.  Participants will be able to bring home the uncooked pasta they have made.  Location: St. Mark’s.  Class Cost: $50.

5/4 (Sat) — 1:00-3:30pm – Kids Great International Vegetarian Dishes – 2

Are you a vegetarian (or thinking about becoming vegetarian) who wants to learn to cook more great veggie dishes?  These vegetarian recipes are for international delicious dishes that you’ll want to make again and again.  Participants will learn to make these recipes under Chef Joel’s guidance and then get to enjoy them:  Fasolada (Greek white bean and vegetable soup);  Paella de Verduras (Spanish vegetable Paella);  Flamkuchen (Alsation pizza);  Ghraybeh (Middle Eastern shortbread butter cookies).  (Note:  Chef Joel can make the entrees vegan upon request.)  Location: St. Mark’s.  Class Cost: $50.

5/28 (Tues) — 4:00-6:30pm – Kids Sushi Workshop

In this hands-on cooking class, participants will learn to make Japanese classics and some new Wisconsin twists.  Kids will learn to roll sushi and make the following rolls (which are vegetarian with a cooked fish option – no raw fish in this class!): Cucumber Roll; Roasted Sweet Potato Roll; Spicy Tuna Roll; and the Wisconsin Roll (including Cheddar cheese!).  Also on the menu: Dora Yaki (Sweet Pancakes with Sweet Bean Paste) for dessert.  Location: St. Mark’s.  Class Cost: $50.

Teen cooking classes are designed for youth ages 13-17.  If you have any questions about which classes are appropriate for your child, please contact Chef Joel.
