COOKING CLASSES IN MADISON

Chef Joel Olson of Hemmachef offers cooking classes in Madison, Wisconsin, and is also available to teach throughout Wisconsin.  Chef Joel offers private classes and special culinary events and can make your corporate or private event a delicious and memorable one!

Chef Joel is adept at working with students of all ages and abilities, from children to adults, and making sure that everyone has a fun culinary experience while learning useful skills. His students have ranged from 6 year-olds to senior citizens, and many classes have included a wide age range of students. Chef Joel provides participants with safe, well-organized, fun-filled instruction, and strives to maintain a courteous, fair kitchen environment.

    Session 1: Chop, Mince, Dice and Sweat: Stocks, Soups, and Salads.  Hone up on your knife skills and learn great techniques for preparing delicious soups and salads.  You will prepare Israeli Chopped Salad; Greek Marinated Vegetable Salad; Chicken and Vegetable Stocks; Tuscan Onion Soup; Roasted Tomato Bisque; and also Cheese Biscuits.  Location: St. Mark’s.  Class cost: $75 per session (or $250 for all 4 sessions).

    Adult Learn to Cook Series  — Learn culinary fundamentals that will establish your culinary foundation in this intensive four week series.  Under the guidance of Chef Joel, each participant will work on their own skills, learning classic techniques as we prepare a variety of recipes that are sure to become part of your cooking repertoire.  Each class will culminate in a meal of the food prepared.  The Adult Learn to Cook Series consists of four classes on four successive Tuesdays:  Session 1–Chop, Mince, Dice and Sweat: Stocks, Soups, and Salads;  Session 2– Meat, Poultry, Vegetables, and Pasta;  Session 3–Fish and Shellfish; and Session 4—Grains, Beans, Legumes with Classic French Sauces.  Classes can be taken singly; however, each class builds on previous classes.  Vegetarian options for all recipes in classes will be discussed.  Class cost: $75 per session or $250 for all 4 sessions.

    Sushi is a blast for kids to make, and it’s not just raw fish; it’s a way of preparing healthy food.  In this class, kids will learn to prepare dashi (seaweed stock) for Miso Soup, along with learning sushi techniques and ingredients.  Kids will learn the secrets of preparing Shari rice and learn how to make several kinds of Sushi Maki Rolls.  On the menu: Classic Miso Soup; California Rolls; Wisconsin Rolls; Spicy Tuna Rolls; and more.  (In this class, no raw fish will be used.)  Kids will also prepare Sesame cookies for dessert.     Parents – enjoy this time with your teen as you learn to cook both fresh and dried pasta, as well as a variety of sauces to complement specific shapes.  You will make fresh egg pasta dough by hand, then roll, cut it into several different shapes, and use it. On the menu: Fettuccine Alfredo (fettuccine with cream and cheese);  Orecchiette (‘little ear’ pasta) with Sausage and Peppers;  Pappardelle (wide ribbon pasta) with Spinach and Ricotta;  Cheese-Filled Ravioli; and Spaghetti with Cacio e Pepe (minimalist cheese and mixed cracked pepper).  Location: St. Mark’s.  Class Cost: $80 per parent-teen pair (each additional teen is $40).

    No worries about splattering grease with this wonderful recipe for making delicious baked donuts.  After preparing the dough, rolling it out, cutting the donuts and then baking them, pairs will decorate their donuts with an assortment of fun Valentine’s Day-themed toppings to make: Pink Valentine Donuts; Sugar and Cinnamon Donuts; and Chocolate Sprinkle Donuts.  And they will be able to take donuts home to share (or not!).  Location: St. Mark’s.  Class Cost: $75 per parent-child pair (each additional child is $35).

    Kids will make, bake, decorate and get to take home a variety of tasty of treats from scratch to share (or not!) with special friends or family.  They will mix and roll out the dough, then cut the cookies to be baked and cooled before decorating with Vanilla Icing and Valentine Sprinkles.  Kids will then mix, shape and form a tasty assortment of Valentine candy treats.  On the menu: Valentine Cut-out Sugar Cookies with Colorful Vanilla Icings and Decorations; Chocolate Bonbons; Raspberry Butter Mints; Red Hot Cinnamon Bark; and Coconut Candy.  Location: St. Mark’s.  Class Cost: $50.

    Kids will learn how to make egg pasta dough from scratch for several different types of pasta.  They will make plain egg pasta plus Valentine Red (Tomato) pasta in different styles—such as linguine and angel hair.  They will also prepare delicious fresh Three Cheese Ravioli.  Two different sauces will also be prepared to be enjoyed at the end of class with the pot of pasta: Marinara Sauce and Alfredo Sauce.     Why do some food and wine combinations dance gracefully on your palate and others stand around and disagree? Learn the basic characteristics of three major white wine varieties: Chardonnay, Riesling and Sauvignon Blanc. Taste these wines along with examples of sweet, salty, bitter and sour foods, plus herbs and spices, examining the role of umami in wine and food pairings as well. Participants help to prepare: Fresh Spinach and Herb Salad with Goat Cheese and Spicy Tomato and Corn Salsa; Crisp Roasted Eggplant with Buttermilk Sauce and Cranberries; Fried Plantains with Sweet Potato and Kale Thai Green Curry; Fruit and Chocolate. Then participants discover and discuss (in approachable language) what works for them as they taste the food they helped to make along with two different wines of each varietal.
